Pan-Fried Salmon with Lemon

Ingredients: 1 skinless salmon fillet, ¼ lemon, salt to taste, freshly ground black pepper to taste, asparagus, mushrooms
Instructions:
1. Rinse the salmon and pat dry thoroughly with paper towels. Season both sides with fine salt or sea salt and freshly ground black pepper. Cover with plastic wrap and refrigerate (not freeze) for an afternoon to marinate.
2. Take the ¼ lemon, peel off only the yellow zest with a peeler and chop it finely.
3. After marinating for an afternoon, take out the salmon. Prepare side vegetables including asparagus and mushrooms.
4. Slice one piece of lemon and squeeze juice from the remaining ¼ lemon.
5. No oil needed. Heat the pan and place the salmon in it. Sear the seasoned side for 3–4 minutes.
6. Flip the salmon and sear the other side for another 2–3 minutes. Add lemon zest, lemon juice and a pinch of rosemary in the final 1–2 minutes.
7. Plate the salmon once done. Stir-fry the side vegetables using the oil rendered from the salmon.
